How to Make Chai Tea at Your Cafe

Chai has become a quintessential beverage on café menus. There are quite a few techniques you can choose from for your recipe solution. Rishi offers support through tetrapaks, loose leaf, and creative culinary recipes. To begin, first select the method for your café—Tetrapak, Loose Leaf Chai concentrate, or Masala Chai Sachet concentrate. View the chart below for instructions on preparation.

Masala Chai Tetrapak

• Open tetrapak
• Serve 1:1 with whole milk

Chai Batch Loose Leaf

• Boil 1 gallon water
• Reduce to simmer, add 55 grams LL tea
• Allow to simmer for 20 minutes
• Add 380 grams sugar
• Strain loose leaf
• Cool + serve 1:1 with whole milk

Chai Batch Sachets

• Measure 515 grams / 2.8 cups 200°F water.
• Add 515 grams / 2.8 cups to water and stir until dissolved, set aside
• Add 20 sachets to an empty, heat-proof gallon pitcher
• Fill pitcher ¾ full with 200F water.
• Cover and steep tea for 12 minutes
• Remove sachets, add sugar/water mixture to brewed tea
• Cool + serve 1:1 with whole milk

Chai Concentrate Batch

one gallon

• 55 grams Rishi Tea & Botanicals loose leaf Chai blend of choice
• 1 gallon water
• 380 grams of sugar or equivalent of sugar preference

Add 1 gallon water to a pot. Bring water to a boil. Add tea. Turn down heat and simmer gently on stove for 20 min. If sugar is desired add up to 380 grams of sugar. Let cool before storing in the fridge. Keeps for up to 72 hours.
